Honey, Invert Sugar, Corn Syrup & High Fructose Corn Syrup
They are not the same thing.
If you've ever flipped over a package and seen corn syrup, high fructose corn syrup, or invert sugar, you might have assumed they were all just different names for the same thing.
They're not.
As someone who spends an embarrassing amount of time making candy (and an equally embarrassing amount of time researching ingredients), I thought it might be helpful to break them down in plain English.
No chemistry degree required.
Corn Syrup
Despite its bad reputation, plain corn syrup is actually one of the most useful ingredients in candy making. Corn syrup is made from corn starch that's been broken down into smaller sugars, primarily glucose.
Its job isn't really to make candy sweeter. It's there to help control sugar crystals.
Without it, many hard candies, caramels, brittles, and toffees would become grainy or crystallize into one giant sugary brick. Corn syrup helps keep everything smooth, glossy, and beautifully textured.
Think of it as the traffic cop of the candy world. It keeps all those sugar molecules from piling into an accident, one giant traffic jam if you will.
High Fructose Corn Syrup (HFCS)
This is where the confusion begins. High fructose corn syrup starts out as regular corn syrup. Then enzymes are used to convert some of the glucose into fructose, making it much sweeter.
Because it's inexpensive and blends well into beverages and processed foods, it's commonly used in:
Soft drinks
Commercial baked goods
Condiments
Cereals
Candy
Ice cream
Packaged snacks
HFCS is processed by they liver and linked to metabolic concerns. But because it's inexpensive and very sweet, it's become incredibly common in heavily processed foods.
Invert Sugar
Invert sugar sounds intimidating, but it's actually one of the oldest candy-making ingredients around.
It's made by splitting ordinary table sugar (sucrose) into its two natural parts:
Glucose
Fructose
That's it.
This creates a syrup that's smoother, helps retain moisture, and reduces crystallization. It's naturally sweeter than regular table sugar and helps keep foods soft and fresh longer.
You'll often find invert sugar in:
Gourmet marshmallows
Soft caramels
Chocolate centers
Fondant
Truffles
Premium ice cream
Bees actually make invert sugar every day. When they turn nectar into honey, enzymes naturally split the sucrose into glucose and fructose—creating one of nature's original invert sugars.
Honey: Nature's Invert Sugar
Now let's talk about my favorite ingredient of the bunch.
Honey isn't just a sweetener—it's one of nature's most fascinating ingredients.
Bees collect nectar, then add enzymes that naturally break much of the nectar's sucrose into glucose and fructose before storing it in the hive. In other words, honey is naturally rich in invert sugars. That means honey shares some of the same candy-making benefits as commercially produced invert sugar.
It helps:
Reduce crystallization
Retain moisture
Create a smoother texture
Keep confections softer for longer
Add depth of flavor that plain sugar simply can't
Unlike commercially produced invert sugar, however, honey also contains trace minerals, organic acids, antioxidants, enzymes, and hundreds of naturally occurring flavor compounds that vary depending on the flowers the bees visited.
No two local honeys are exactly alike.
When I use local honey in my recipes, I'm not just adding sweetness—I'm adding character.

Corn Syrup is a workhorse. It helps control crystallization and creates smooth, glossy candy.
High Fructose Corn Syrup is designed to provide inexpensive sweetness and is commonly used in large-scale food manufacturing. I DO NOT and WILL NOT use HFCS.
Invert Sugar is a favorite among artisan confectioners because it improves texture, moisture retention, and shelf life.
Honey does many of the same job as invert sugar while contributing its own unique flavor, aroma, and personality. Depending on the recipe, it can even replace some or all of the commercially produced invert sugar. The added bonus, honey makes marshmallows far fluffier than the substitutes discussed here. They're simply different tools with different strengths.
